Dr. Ezra Kiprono Mutai

Dr. Ezra Kiprono Mutai is currently a Postdoctoral Teaching and Research Fellow in Nutrition and Biology at the Division of Nutritional Sciences (DNS) at Cornell University. Dr. Mutai graduated as the best overall student with the highest honors (Summa Cum Laude) from Livingstone College in North Carolina, USA with a Bachelor of Science degree in Biology. He obtained a Master’s degree in Food Science from Alabama A&M University, USA and a Ph.D. in Nutrition with a specialization in Biochemical and Molecular Nutrition from the University of Nebraska-Lincoln, USA. Dr. Mutai has extensive research experience in the field of bioavailability and biological activities of food bioactive compounds in humans. His research interests include understanding nutrient metabolism at the cellular level and the use of natural bioactive compounds in modulating development of metabolic disorders. He has widely published and presented his research at local and national conferences within the US.
As a Postdoctoral Teaching and Research Fellow at Cornell University, Dr. Mutai’s responsibilities include instruction and overall administration of two courses; (NS4310- Anatomy and Physiology) and a lab-based class (NS3320- Methods in Nutritional Sciences). He contributes to the curriculum development, course content, assist enrolled students by holding office hours and other communications, delivers lectures and oversee graduate and undergraduate teaching assistants. Besides teaching, Dr. Mutai is also conducting research in collaboration with a DNS faculty member on the interactions between host genetics, dietary intake, and gut microbes in order to benefit the host health. His overall research objective is to find ways on how to develop a systems biology approach to personalized nutrition in order to assist in treating metabolic disorders or decrease disease risk.
Dr. Mutai’s short-term goal is to develop skills and experience in university teaching and research in preparation for an academic career pursuit. His ultimate long-term professional goal is to use his interdisciplinary academic background to teach and mentor young upcoming scientists interested in pursuing careers in the field of Nutritional Sciences. Dr. Mutai has received numerous awards and recognitions for his scholarship and is a member of the American Society for Nutrition (ASN) and Institute of Food Technologists (IFT).
