![]() Prof. John Igene |
John Oamen Igene, born 27-03-48, studied Agriculture at the University of Ibadan (1970- 1973), Nigeria and earned M.Sc. and Ph.D in Food Science at the Michigan State University, East Lansing Michigan, USA (1975-1979) with academic scholarships. His specialization includes animal products, science and technology, food chemistry, food processing and post harvest technology. He became a full Professor of Food Science & Technology in 1987 at age 39 years while at the University of Maiduguri, Maiduguri Nigeria. At the University of Maiduguri, he pioneered the development of the 1st ever Department of Food Science & Technology in a Northern based University in 1981 and in 1985, he was appointed the Foundation Dean of the School of Post Graduate Studies; and held the positions of Head of the Department of Food Science & Technology between 1984 and 1993 and of the Dean of Post Graduate Studies (1985-1992) concurrently. He made great strides and significant impacts while serving at the University of Maiduguri. Several of his former students have now become professors; and senior civil servants, holding significant positions in academia, industry and in the civil service. He moved to the University of Benin, Benin City, Nigeria; in 1993 and became Head of the Department of Animal Science (1995-1998); Dean of the Faculty of Agriculture (1999-2001); and the Pioneer Chairman/CEO of UNIBEN Enterprises Ltd; a business arm of the University (1998-2005). At the University of Benin he pioneered the development of UNIBEN Water in 2000 and which has become a leader in the bottled water business in EDO State. He also pioneered the now most successful Multi-purpose Cooperative Society at the University of Benin; the FACOOP, of the Faculty of agriculture in 1999 while he was Dean. Facoop now has over 600 memberships and grossing about N25M monthly in business transactions; a testimony of a vision and an achievement. Professor Igene has been the recipient of several coveted Awards, Honours, Scholarships and Fellowships such as the Pfizer Travel Fellowship (1981), Senior Fulbright Fellowship (1982), and Association of Commonwealth Universities (ACU) Fellowship (1989) to the University of Agriculture, Malaysia; and the Nigerian Institute of Food Science & Technology (NIFST) Fellowship (1987). He was President of the Nigerian Institute of Food Science & Technology (NIFST) between 1993 and 1995 and a member of the Governing Council of NIFST (1988-2006). He is a Principal Partner of Jostraig Nig. Ltd (Consulting Firm). He has been a Consultant to several organizations such as the UNDP (1995-2004), FAO( 1985-1993, 2010), UNICEF(1992), Harvard Institute for International Development (1993-1995), Several Agricultural Development Programmes (1987-19995), Federal Ministry of Agriculture and Rural Development (1992-1996), the Niger Delta Development Commission(NDDC) on the Master Plan Project from 2002-2005. He was a Full time Consultant on Agro-processing with the National Programme for Food Security (FGN/FAO between 2008 and 2010 while on sabbatical leave; the Raw Materials Research & Development Council (RMRDC) between 1989 and 2008 and the Federal Ministry of Industries(1995-1998) as well as several private – sector organizations in Nigeria. He was the Chairman of National committee for the Standard Organization of Nigeria (SON) on the development of Industrial standards for Suya products and he is currently a member of Education Trust Fund (ETF) Technical Advisory Group TAG) on Book Development. He was an Adviser to the Federal Government of Nigeria delegation to the International Conference on Nutrition in Rome, Italy (1992). As a creative individual, he has won several international research grants (FAO 1987; USAID 2003-2005) for the transformation of Kilishi production process from pilot plant stage to commercialization; Merit award, University of Nigeria Nsukka (2005) on the development of Kilishi process technology, and the certificate of Excellence awarded by the National Universities Commission (NUC) for the Development of modern Kilishi process technology (2005). In 2008, the Nigerian Army procured over 5000.0 packs of Proff’s Kilishi for the troops in Dafur, Sudan from our kilishi factory at the University of Benin. The kilishi process technology developed by Prof. John Igene and Associates has recently been adopted for commercialization by the National Programme for Food Security with several small-scale kilishi factories slated for Yobe State (NPFS, 2010). RMRDC has long adopted the same kilishi process technology for National development (since 2004) through workshops and extension training programmes. Professor Igene is an internationally recognized authority on lipid auto-oxidation in food systems with special emphasis on Warmed-Over-Flavour (WOF) and on traditional African meat products technology. He has published over 120 scientific and technical papers and several monographs in Food Science & Technology and in Agriculture. He is a Christian and a member of the Full Gospel Business Men’s Fellowship International (FGBMFI), belonging to the Ugbowo Chapter, Benin City, Nigeria. He is faithfully and happily married to Dr (Mrs) Stella Igene and they have four children.

Dr. Emmanuel Ohene Afoakwa Emmanuel holds Ph.D. Degree in Food Science from the University of Strathclyde, Glasgow, U. K.; M.Phil and B.Sc (Honours) degrees in Food Science from the University of Ghana. He also holds Certificates in Food Composition Database Analysis from the University of Pretoria, Pretoria, South Africa and International Food Laws and Regulations from the Michigan State University, East Lansing, Michigan, USA. In addition, he holds a combined Certificate in Information Technology (IT) in Nutrition from the Swedish University of Agricultural Science, Uppsala, Sweden and the Peridiniya University, Peridiniya, Sri Lanka, and also Certificates in Quality Management Systems in the Food Industry and Food Safety Systems from the International Agricultural Centre of Wageningen University, Wageningen, the Netherlands. He is also a trained and a Licensed Food Auditor by the World Food Safety Organization, UK. He has vast relevant experience in Food Science and Technology, International Food Laws and Regulations, and School Feeding Programmes. He is a member of several professional bodies and has authored and co-authored 102 publications (including 43 peer-reviewed journal publications, 4 books and 55 conferences presentations with published abstracts) in Food Science and Technology, Food and Nutrition Security, and School Feeding Programmes. In the pursuance of his duties as a Food Scientist/Technologist, he has travelled to over twenty (20) different countries across the globe including; USA, United Kingdom, China, Germany, Finland, Norway, Denmark, Sweden, Netherlands, South Africa, United Arab Emirates, Fiji Islands, Sri Lanka, Bangladesh, Nigeria, Togo, Benin, Burkina Faso, Cote d’Ivoire, Cameroon, Kenya, Uganda and Ethiopia, where he has gained high international recognition in his work. He is a Member of Board of Directors of the Global Child Nutrition Foundation (GCNF) in Washington, USA; the Executive Secretary for the African Network for School Feeding Programmes; and the Honorary Secretary for Society on Information Technology for the Advancement of Nutrition in Africa (ITANA). He also serves as Member of Editorial Boards of several International Journals including the International Journal of Biological and Chemical Sciences, Global Science Journals (Foods; Fresh Produce; & Fruit, Vegetable, Cereal Science and Biotechnology), and the Technical Reviewer for the African Journal of Food, Agriculture, Nutrition and Development (AJFAND), and the African Journal of Food Science. As well, he is a Reviewer for Journal of Food Engineering, Journal of Food Composition and Analysis, and International Journal of Food Science and Technology; European Food Research and Technology, Journal of Food Processing and Preservation, Food and Nutrition Bulletin and the South African Journal of Clinical Nutrition. He has vast experience in Food Technology and Nutrition, and translates his research findings through process and product development into industrial productions towards the achievement of the UN Millennium Development Goals (MDGs) mainly on food and nutrition security, and sustainable agricultural development. Presently, he is a Senior Lecturer at the Department of Nutrition and Food Science, University of Ghana. Sue Horton is Professor of Economics at Wilfrid Laurier University in Canada, where for the last four years she has been Vice-President: Academic. Prior to that she spent twenty-two years at the University of Toronto. She holds a BA from Cambridge and a PhD from Harvard, both in economics. She is the editor/co-editor of four books, and the author/co-author of more than fifty refereed journal articles and book chapters, with in additional book reviews and technical reports. Selected recent works on nutrition include papers on priority setting for zinc (Public Health Nutrition, 2008), food fortification (Journal of Nutrition, 2006), Sprinkles (Canadian Journal of Public Health, 2006), Iron (Food Policy, 2006), and the implications of over- and under-nutrition for health in Asia (Nutrition Reviews, 2001; Food and Nutrition Bulletin, 2001). Sue has served as a consultant for a number of agencies, including the World Health Organization, UNICEF, the World Bank, the Asian Development Bank, FAO, and the Global Alliance for Improved Nutrition. She is a former Board member (and Vice-Chair) for the International Food Policy Research Institute, and currently Treasurer of the Board of the African Economic Research Consortium. Prof. Joseph Allotey is a Member of AJFAND International Advisory Board, AJFAND Oversight Editorial Board, AJFAND Reviewer, Author and FRIEND. He is an associate professor of Entomology was born on 15th March 1951 in Accra, Greater Accra Region, Ghana. Joseph is a vastly experienced entomologist with three degrees to his credit: Bachelor of Science degree in Zoology from University of Ghana, Masters degree in Zoology from the same University and a PhD in Applied Entomology from the Rivers State University of Science and Technology in Nigeria. In research, he has a vast wealth of experience, having attended over 31 conferences/workshops, with 41 paper and 3 posters presentations. He has 64 publications consisting of one book, 2 chapters, 32 peer reviewed journal publications, 7 technical bulletins, 2 booklets, 6 published abstracts, 12 conference proceedings, 1 technical support, 1 electronic publication- CD ROM. In professional qualification service, he has edited reading materials (volume 1, 2, and 30) on Insect Ecology, reviewed Scientific papers in 5 international Sciences Journals, a member of the editorial board of two international science journals, member of the International Advisory Council of TODA Institute for Global Peace and Policy Research. Dr. Wilna Oldewage-Theron She obtained a B.Sc (Dietetics) and Postgraduate Diploma in Hospital Dietetics from Pretoria University in South Africa in 1982 and 1983 respectively. She worked as a hospital dietitian for five years, a nutritional consultant for a pharmaceutical company for two years and as a dietitian for an industrial catering company for three years. She completed a diploma in purchasing management in 1993 and was then appointed as a purchasing manager for an industrial catering company and also later for an international hotel group. Her Ph.D studies focused on the evaluation of the fortification of sugar with vitamin A and tested the interaction between vitamin A and iron in adolescent girls during a clinical field trial. Wilna joined the Vaal Triangle Technikon in 1995 as a lecturer in Mass Catering, Nutrition and Research Methodology. She was appointed Head of Department: Hospitality and Tourism in 1999. During the past four years Wilna published five articles in scientific journals and presented papers at various national and international conferences. She is at present the promoter for five doctoral- and one postdoctoral students. She successfully completed the supervision of one doctoral and three masters students. Wilna became a reviewer for the AJFAND in 2002. Her research interests include community nutrition, micronutrient deficiencies and household food security. Dr. Anselimo Makokha is a Senior Lecturer in Food Science and Nutrition at the Department of Food Science and Technology, Jomo Kenyatta University of Agriculture and Technology (JKUAT). He holds a PhD in Food Science and Technology, from JKUAT in Kenya and an M.Phil. in Nutrition from University of Cambridge in the UK. Prior to joining JKUAT, Dr. Makokha worked with the Kenya Industrial Research Development Institute (KIRDI) and the Kenya Agricultural Research Institute (KARI). With over 20 years of working experience, Dr. Makokha has published over 15 papers in peer-reviewed journals. He is the KCAN advocacy Coordinator. Dr. Rotimi Aluko |
Dr Rotimi Aluko is a Food Chemist with BSc and MSc degrees in Biochemistry and a PhD degree in Food Science. His area of research specialization is structure-function properties of food proteins and bioactive peptides. He was a Lecturer at the Ahmadu Bello University from where he went to the University of Guelph, Canada to obtain his PhD degree. He is also a member of the Richardson Centre for Functional Foods and Nutraceuticals, a $25 million dollar state-of-the-art research facility that opened in 2006 at the University of Manitoba. Dr. Aluko has trained several students, postdoctoral fellows and technicians, some of whom have become Faculty members in Universities in Canada, China and South Korea. He has published over 50 peer-review journal articles and book chapters. Dr. Michael N.I. Lokuruka is a Senior Lecturer in Food Science and Food Industry Management in the Department of Dairy, Food Science and Technology of Egerton University, Kenya. He has over 7 years of Fish Handling, Processing, Food Quality Assurance, and General Management Experience in the Kenyan Food Industry, and over 18 years of University teaching/research. He is a member of the Kenya Institute of Food Science and Technology, a past member of the British Institute of Food Science and Technology and the Institute of Food Technologists of the U.S. He is a graduate of the Universities of Nairobi (Kenya), Reading (U.K.), Trondheim (Norway) and Hebrew University of Jerusalem (Israel). He was awarded his Ph.D. (Food Science-majoring in Fish Handling and Toxicology) from Cornell University in the U.S. His refereed articles appear in the Journal of Aquatic Food Products Technology, Food and Food ways Journal, American Journal of ethno history and the African Journal of Food, Agriculture, Nutrition and Development. His forthcoming articles will appear in the African Journal of Food, Agriculture, Nutrition and Development, the Egerton Journal and the African Studies Review. He has published a book on Food Safety and Quality Assurance in the Fish Industry. Among the courses he teaches are Food Plant Operations Management; Meat, Poultry and Seafood Technology; Food Legislation and Standards; Food Processing and Preservation; Research Methods and Scientific Writing (undergraduate students) and Food Quality Assurance (Graduate Students). He peer-reviews for the African Journal of Food, Agriculture, Nutrition and Development, and the Egerton Journal. He is Currently Writing a Book on Food Legislation and Standardization in the Context of Ensuring Food Safety and Quality.
